We use all organic fruit, triple wash it, add a little sugar and a little lemon juice, and then let the magic happen. We process fruit in small batches, from a farmer's market trusted source, or from a friend's tree ( always pesticide free). We let the sun cook the jam, the process takes 2-3 days. We then vacuum pack in the jars and it's ready for shelf storage ( stable for up to one year).
