The fruit is organic, picked by us or bought from local farmers markets. The jam is made with a low sugar content ( 1/2 to 1/4 of typical jams). After triple washing, pits are extracted and fruit is mixed with sugar and lemon juice. It cooks part way on the stove, until the fruit starts breaking. It is then transferred to pyrex flats, covered with cheesecloth, then it finishes cooking in the sun. This last step takes 2-4 days ( depending on weather), after which jam is canned in individual jars, getting it ready for you.
